Introduction

Shaam Savera is a royal North Indian dish made famous by Chef Sanjeev Kapoor. The name itself means “Evening and Morning”, symbolizing the deep green spinach kofta (shaam/evening) wrapped around a creamy paneer filling (savera/morning).
These koftas are then served in a rich, velvety tomato-cashew gravy, making it a show-stopper dish for festivals, parties or special occasions.
The contrasting colors, soft paneer centre, and aromatic curry make this recipe truly restaurant-style and unforgettable.

⭐ Ingredients

For Spinach Koftas

Spinach (palak) – 300 g

Paneer – 200 g (crumbled)

Green chillies – 2 (finely chopped)

Ginger – 1 tsp (grated)

Potato – 1 medium (boiled & mashed)

Cornflour – 2–3 tbsp

Garam masala – ½ tsp

Salt – as needed

Oil – for frying




For Tomato Gravy

Tomatoes – 5 large (roughly chopped)

Onion – 1 medium (optional, classic version is without onion)

Cashews – 10–12

Ginger – 1 inch

Garlic – 4 cloves

Green chilli – 1

Butter – 2 tbsp

Kashmiri red chilli powder – 1 tsp

Turmeric – ¼ tsp

Coriander powder – 1 tsp

Garam masala – ½ tsp

Fresh cream – 2 tbsp

Salt – to taste


🍽 How to Make Shaam Savera


Step 1: Prepare the Spinach Mixture

1. Rinse spinach well and blanch it in boiling water for 1–2 minutes.

2. Immediately transfer to ice-cold water (to retain the green color).

3. Squeeze out all water completely.

4. Blend or finely chop spinach.

5. In a bowl, mix spinach with:

mashed potato

ginger

green chilli

salt

garam masala

2–3 tbsp cornflour

6. Combine to form a firm dough (not too sticky).
✔ Pro Tip:
If the mixture feels too moist, add extra cornflour.
Step 2: Prepare the Paneer Filling

1. In another bowl, add:

crumbled paneer

salt

pinch of pepper or green chilli

2. Mix gently.
✔ Optional: Add a pinch of cardamom for a fragrant twist.


Step 3: Shape the Koftas

1. Take a portion of spinach dough and flatten it on your palm.

2. Place 1 tbsp paneer filling in the center.

3. Carefully seal and roll into a smooth round ball.

4. Repeat for all koftas.
Step 4: Fry the Koftas

1. Heat oil on medium-low flame.

2. Fry koftas until firm and lightly browned.

3. Remove and keep aside.

✔ Healthier option: Air fry or shallow fry with minimal oil.


Step 5: Make the Tomato Gravy

1. Heat 1 tbsp butter in a pan.

2. Add ginger, garlic, green chilli, onion (if using) and sauté.

3. Add tomatoes + cashews.

4. Cook for 5–7 minutes until tomatoes soften.

5. Cool the mixture and blend into a smooth puree.

6. Strain for restaurant-style silkiness.

7. Heat remaining butter in a pan:

Add chilli powder, turmeric, coriander powder.

Add the tomato puree.

8. Simmer for 10 minutes.

9. Add salt, garam masala, cream and mix.
Step 6: Assemble Shaam Savera

1. Cut koftas into halves to show the beautiful green-and-white pattern.

2. Pour hot tomato gravy into a serving bowl.

3. Gently place the kofta halves on top.

4. Drizzle cream over it for garnish.
