For Chicken Marination:  
- 500g boneless chicken (thighs or breast, cut into bite-sized pieces)  
- ½ cup plain yogurt  
- 1 tbsp lemon juice  
- 1 tbsp ginger-garlic paste  
- 1 tsp red chili powder  
- 1 tsp garam masala  
- ½ tsp turmeric powder  
- 1 tsp kasuri methi (dried fenugreek leaves)  
- Salt to taste

For the Gravy:  
- 2 tbsp butter + 1 tbsp oil  
- 1 large onion (finely chopped)  
- 4 tomatoes (pureed)  
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds  
- 1 tsp coriander powder 
- 1 tsp red chili powder (adjust to taste) 
- 1 tsp garam masala  
- 1 tsp sugar (balances acidity)  
- ½ cup fresh cream 
- 2 tbsp kasuri methi (crushed)  
- Salt to taste  

For Finishing:  
- 2 tbsp butter 
- 2 tbsp fresh cream 
- Fresh coriander leaves(for garnish)

1. Marinate the Chicken (30 mins – Overnight)  
1. In a bowl, mix yogurt, lemon juice, ginger-garlic paste, red chili powder, garam masala, turmeric, kasuri methi, and salt.  
2. Add chicken pieces, coat well, and refrigerate for at least 30 mins (best overnight for maximum flavor).  
2. Cook the Chicken  
- Grill/Bake: Skewer and grill/bake at 200°C (390°F) for 15-20 mins until slightly charred.  
- Pan-Fry: Heat oil, cook chicken until golden (not fully cooked). Set aside.  

3. Prepare the Gravy 
1. Heat butter + oil in a pan. Add cumin seeds, let them splutter.  
2. Sauté onions until golden. Add ginger-garlic paste, cook for 1 min.  
3. Add tomato puree, cook on medium heat until oil separates (10 mins). 
 
4. Add coriander powder, red chili powder, garam masala, sugar, and salt. Mix well.  
5. Blend the mixture into a smooth paste (optional for silky texture).  

4. Combine Chicken & Gravy  
1. Return gravy to pan, add 1 cup water and simmer for 5 mins.  
2. Add cooked chicken, simmer for 8-10 mins on low heat.  
3. Stir in fresh cream and crushed kasuri methi.  
5. Final Touch  
- Finish with a dollop of butter, drizzle of cream, and fresh coriander
