Stuffed Lauki Barfi (No Sugar): A Wholesome Redemption of a Classic Sweet In the vibrant tapestry of Indian mithais, Lauki Barfi holds a unique place. Often dubbed a "healthy sweet," it traditionally combines grated bottle gourd (lauki/doodhi) with milk, sugar, and ghee to create a fudge-like delicacy. However, for the health-conscious, diabetics, or those simply reducing refined sugar, the classic recipe loses its virtuous appeal. Enter the Stuffed Lauki Barfi (No Sugar)—a revolutionary take that doesn't just eliminate sugar but elevates the dish into a nutrient-dense, guilt-free indulgence. This recipe reimagines the barfi by using natural sweetness from dates and a hint of jaggery, while introducing a surprise element: a rich, nut-based stuffing. The result is a two-layered delight—a soft, cardamom-scented lauki outer layer enveloping a luscious core of nuts and seeds. It’s moist, flavorful, and satisfyingly sweet without a grain of refined sugar. Perfect f...
✨️Introduction:
Welcome to my kitchen! This pineapple curry is a celebration of tropical flavours, a beautiful symphony of sweet, tangy, and savoury notes. It's a dish that defies expectations—neither a dessert nor a overly spicy concoction, but a perfectly balanced, aromatic curry that pairs wonderfully with steamed rice or flatbreads. Inspired by the coastal and Kodava cuisines of India, this recipe uses fresh pineapple to create a bright, vibrant gravy that's lightly spiced with cumin, mustard seeds, and a hint of warming garam masala. It's quick, impressive, and a guaranteed conversation starter at your dinner table.
✨️Chef's Note: The key is to balance the natural sweetness of the pineapple with the acidity from tomatoes and the heat from green chillies. Don't skip the tempering (tadka) at the end—it's the fragrance that elevates the entire dish.

· Yield: Serves 4
✨️Ingredients:
For the Curry Paste:
· 1 medium onion, roughly chopped
· 2 medium ripe tomatoes, chopped
· 4-5 garlic cloves
· 1-inch piece of ginger, peeled
· 1-2 green chillies (adjust to taste)
· 2 tbsp fresh coriander stems (optional, but great for flavour)
✨️For the Curry:
· 3 cups fresh pineapple, cut into 1-inch cubes (about 1 medium pineapple)
· 2 tbsp cooking oil (coconut or vegetable)
· 1 tsp black mustard seeds
· 1 tsp cumin seeds
· 10-12 fresh curry leaves
· 1/2 tsp turmeric powder
· 1 tsp red chilli powder (or Kashmiri red chilli for colour)
· 1.5 tsp coriander powder
· 1/2 tsp garam masala
· 1 cup water or light vegetable stock
· 1/2 cup coconut milk (thick)
· Salt to taste
· 1 tsp jaggery or brown sugar (optional, only if pineapple is very tart)
✨️For the Tempering (Final Tadka):
· 1 tbsp coconut oil or ghee
· 1/2 tsp mustard seeds
· 1 dry red chilli
· 5-6 fresh curry leaves
· 2 tbsp fresh coriander leaves, chopped (for garnish)
✨️Method:
1. Prepare the Base:
1· In a blender, combine the chopped onion, tomatoes, garlic, ginger, green chillies, and coriander stems. Blend into a smooth, fine paste without adding water. Set aside.
2. Sauté the Aromatics:
· Heat 2 tbsp oil in a deep pan or kadhai over medium heat.
· Add the mustard seeds and let them splutter. Add cumin seeds and curry leaves. SautĂ© for 20 seconds until fragrant.
· Carefully add the blended paste (it may splutter). Cook, stirring frequently, for 8-10 minutes until the raw smell disappears, the oil starts to separate from the sides, and the mixture thickens.
3. Bloom the Spices:
· Reduce heat to low. Add turmeric powder, red chilli powder, and coriander powder. Stir quickly for 30 seconds to cook the spices.
· Add about 1/4 cup water to deglaze the pan and prevent burning.
4. Simmer the Curry:
· Add the fresh pineapple cubes. Stir well to coat them with the masala.
· Pour in the remaining water or stock and season with salt. Bring to a gentle boil.
· Cover and simmer on low heat for 8-10 minutes, or until the pineapple is tender but still holds its shape (it shouldn't become mushy).
5. Finish the Gravy:
· Uncover, add the coconut milk and garam masala. Stir gently and heat through for 2-3 minutes. Do not boil vigorously after adding coconut milk, as it may curdle.
· Taste and adjust seasoning. If the curry is too tangy, add a little jaggery or sugar to balance. The final curry should have a creamy, slightly thick consistency.
6. The Final Tempering (Tadka):
· In a small tempering pan, heat 1 tbsp coconut oil/ghee.
· Add mustard seeds, let them pop, then add the dry red chilli and curry leaves. Let them crackle for a few seconds.
· Immediately pour this sizzling tempering over the finished curry. It will create an incredible aroma.
7. Serve:
· Garnish generously with fresh coriander leaves.
· Serve hot with steamed basmati rice, jeera rice, or soft appams/parathas.
✨️Chef Vikas's Pro Tips:
· Pineapple Choice: Use ripe but firm pineapple for the best sweet-tangy balance. Overripe fruit will make the curry too sweet and mushy.
· Spice Control: For a milder curry, deseed the green chillies. For extra heat, add a pinch of black pepper with the dry spices.
· Protein Boost: Add pan-fried tofu, chickpeas, or paneer cubes along with the pineapple for a more substantial meal.
· Make-Ahead: The spice paste can be made a day ahead. The curry tastes even better the next day as the flavours meld.
· Consistency: For a richer gravy, use thick coconut milk. For a lighter version, use light coconut milk or more stock.
Enjoy this taste of the tropics! Let the vibrant flavours transport you.
