Welcome to my kitchen!This pineapple curry is a celebration of tropical flavours, a beautiful symphony of sweet, tangy, and savoury notes. It's a dish that defies expectations—neither a dessert nor a overly spicy concoction, but a perfectly balanced, aromatic curry that pairs wonderfully with steamed rice or flatbreads. Inspired by the coastal and Kodava cuisines of India, this recipe uses fresh pineapple to create a bright, vibrant gravy that's lightly spiced with cumin, mustard seeds, and a hint of warming garam masala. It's quick, impressive, and a guaranteed conversation starter at your dinner table.

· 2 tbsp cooking oil (coconut or vegetable)
· 1 tsp black mustard seeds
· 1 tsp cumin seeds
· 10-12 fresh curry leaves
· 1/2 tsp turmeric powder
· 1 tsp red chilli powder (or Kashmiri red chilli for colour)
· 1.5 tsp coriander powder
· 1/2 tsp garam masala
· 1 cup water or light vegetable stock
· 1/2 cup coconut milk (thick)
· Salt to taste
· 1 tsp jaggery or brown sugar (optional, only if pineapple is very tart)

✨️For the Tempering (Final Tadka):

· 1 tbsp coconut oil or ghee
· 1/2 tsp mustard seeds
· 1 dry red chilli
· 5-6 fresh curry leaves
· 2 tbsp fresh coriander leaves, chopped (for garnish)


✨️Method:

1. Prepare the Base:

1· In a blender, combine the chopped onion, tomatoes, garlic, ginger, green chillies, and coriander stems. Blend into a smooth, fine paste without adding water. Set aside.
2. Sauté the Aromatics:

· Heat 2 tbsp oil in a deep pan or kadhai over medium heat.
· Add the mustard seeds and let them splutter. Add cumin seeds and curry leaves. SautĂ© for 20 seconds until fragrant.
· Carefully add the blended paste (it may splutter). Cook, stirring frequently, for 8-10 minutes until the raw smell disappears, the oil starts to separate from the sides, and the mixture thickens.
3. Bloom the Spices:

· Reduce heat to low. Add turmeric powder, red chilli powder, and coriander powder. Stir quickly for 30 seconds to cook the spices.
· Add about 1/4 cup water to deglaze the pan and prevent burning.
4. Simmer the Curry:

· Add the fresh pineapple cubes. Stir well to coat them with the masala.
· Pour in the remaining water or stock and season with salt. Bring to a gentle boil.
· Cover and simmer on low heat for 8-10 minutes, or until the pineapple is tender but still holds its shape (it shouldn't become mushy).
5. Finish the Gravy:

· Uncover, add the coconut milk and garam masala. Stir gently and heat through for 2-3 minutes. Do not boil vigorously after adding coconut milk, as it may curdle.
· Taste and adjust seasoning. If the curry is too tangy, add a little jaggery or sugar to balance. The final curry should have a creamy, slightly thick consistency.
6. The Final Tempering (Tadka):

· In a small tempering pan, heat 1 tbsp coconut oil/ghee.
· Add mustard seeds, let them pop, then add the dry red chilli and curry leaves. Let them crackle for a few seconds.
· Immediately pour this sizzling tempering over the finished curry. It will create an incredible aroma.
7. Serve:

· Garnish generously with fresh coriander leaves.
· Serve hot with steamed basmati rice, jeera rice, or soft appams/parathas.

· Pineapple Choice: Use ripe but firm pineapple for the best sweet-tangy balance. Overripe fruit will make the curry too sweet and mushy.

· Protein Boost: Add pan-fried tofu, chickpeas, or paneer cubes along with the pineapple for a more substantial meal.
