- Batter: Mix besan, cornflarch, turmeric, and water to form a thick, smooth batter.  
- Fry: Dip stuffed paneer in the batter, ensuring even coating. Shallow fry in hot oil until golden. Set aside.  
2. Prepare the Gravy:  
- SautĂ© Onions: Heat ghee in a pan. Add onions and sautĂ© until golden. Add ginger-garlic paste and cook for 2 minutes.  
- Tomato Base: Add tomato purĂ©e, soaked cashews, coriander powder, turmeric, red chili powder, and salt. Cook until oil separates (~8 minutes).  
- Blend: Cool the mixture, then blend into a smooth paste. Return to the pan.  
- Finish Gravy: Stir in garam masala, sugar (if using), and cream. Simmer for 5 minutes.  
3. Assemble:  
- Gently place fried paneer into the gravy. Simmer for 5 minutes on low heat.
