2. Add 1 tablespoon of ghee and let it melt.
3. Add the crumbled khoya and sauté it for 8-10 minutes, stirring continuously.
4. You will notice the khoya changing color slightly, becoming a light golden shade, and releasing a fragrant, nutty aroma. This step is crucial for developing flavor. Be patient and do not rush it. Once done, transfer it to a plate and set aside.
Step 3: Prepare the Sugar Syrup

1. In the same pan, add the milk and sugar.
2. Heat on medium, stirring continuously until the sugar completely dissolves.
3. Let the mixture come to a gentle boil. Cook for 3-4 minutes until the syrup slightly thickens. You don't need any thread consistency; it just shouldn't be watery. If using saffron, add it now.
Step 4: Combine and Cook the Barfi Mixture

1. Reduce the heat to low. Add the roasted khoya back into the pan with the sugar syrup.
2. Add the cardamom powder and the remaining 1 tablespoon of ghee.
3. Mix everything thoroughly and cook on low heat, stirring continuously.
4. The mixture will initially be loose but will start to thicken as you cook it.
5. Keep stirring and cooking for about 8-12 minutes. The mixture is ready when it:
   · Leaves the sides of the pan completely.
   · Forms a soft, cohesive mass.
   · Starts to gather around your spatula.

Step 5: Set and Garnish the Barfi

1. Grease a plate, thali, or a small square pan with a few drops of ghee.
2. Quickly transfer the hot barfi mixture onto the greased tray.
3. Using a greased spatula or the back of a greased spoon, press and flatten the mixture evenly into a slab of about 1/2 to 3/4-inch thickness.
4. While the mixture is still warm, generously sprinkle the chopped pistachios and almonds over the top and press them down gently so they stick.

1. Allow the barfi to cool down completely at room temperature. This will take 1-2 hours.
2. Once it's firm to the touch, place the tray in the refrigerator for at least an hour to set completely. This makes cutting much easier.
