Introduction

Jalebi is one of India’s most beloved sweets — known for its golden spirals, crisp texture, and syrupy sweetness. Traditionally made by fermenting a flour batter and frying it in ghee or oil before soaking in fragrant sugar syrup, jalebi is enjoyed across South Asia, the Middle East, and parts of Africa.
It’s often served hot, with milk or rabri, during festivals like Diwali, Eid, or weddings.

For the Jalebi Batter

All-purpose flour (maida) – 1 cup (125 g)

Cornflour – 1 tbsp

Yogurt (curd) – 2 tbsp

Water – ½ cup (adjust as needed for thick flowing consistency)

Baking powder – ¼ tsp (optional, for instant version)

Ghee or oil – for deep frying


For the Sugar Syrup

Sugar – 1 cup (200 g)

Water – ½ cup

Saffron strands – a few (optional, for color and aroma)

Cardamom powder – ¼ tsp

Lemon juice – ½ tsp (to prevent crystallization)


For Garnish (optional)

Finely chopped pistachios or almonds

Silver leaf (vark)

Step 1: Prepare the Batter

1. In a bowl, mix maida, cornflour, and yogurt.

2. Gradually add water, whisking continuously to form a smooth, lump-free batter.
The consistency should be thick yet pourable, like dosa batter.

3. Cover and allow the batter to ferment for 8–12 hours (overnight) in a warm place.
For instant jalebi, add ¼ tsp baking powder just before frying instead of fermenting.



Step 2: Prepare the Sugar Syrup

1. In a pan, combine sugar and water.

2. Heat until sugar dissolves, then boil for 5–6 minutes until it reaches one-string consistency (when pressed between your fingers, it forms a single thread).

3. Add saffron, cardamom powder, and lemon juice.

4. Keep the syrup warm (not hot) while frying jalebis.




Step 3: Fry the Jalebis

1. Pour the fermented batter into a squeezy bottle, piping bag, or cloth with a small nozzle.


2. Heat ghee or oil in a wide, flat pan on medium heat.

3. Pipe the batter into spirals (2–3 rounds) directly into the oil.

4. Fry until golden and crisp on both sides.


5. Remove using a slotted spoon and immediately dip into the warm sugar syrup for about 20–30 seconds.

6. Lift and place on a plate or wire rack to drain excess syrup.



Step 4: Serve

Serve hot or warm, garnished with chopped nuts or silver leaf.
Pair with rabri, milk, or enjoy it plain!

Fermentation: For authentic flavor and texture, ferment naturally. Instant versions are crisp but less tangy.

Oil temperature: If the oil is too hot, jalebis won’t cook inside; too cool, they’ll absorb oil. Maintain medium heat.

Sugar syrup: Keep it warm, not hot, when soaking jalebis — otherwise, they’ll become soggy.

Crispness tip: Add 1 tsp of rice flour to the batter for extra crunch.

Color: You can add a pinch of orange food color to the batter if desired.
