- 1 tsp rose water (optional)  
- Pinch of saffron threads

- 1 liter full-fat milk  
- 4 tbsp sugar
- ½ tsp cardamom powder  
- 1 tbsp chopped pistachios + almonds  
- Large pinch of saffron threads (soaked in 1 tbsp warm milk)

- Slivered pistachios, almonds, and edible silver leaf (varak) 


🍯Step-by-Step Recipe

1. Prepare the Rabri (Reduced Milk):  
- In a heavy-bottomed pan, boil milk over medium heat.  
- Once boiling, reduce heat to low. Simmer, stirring frequently, until milk reduces to ⅓ of its volume (~25–30 minutes).  
- Add sugar, cardamom powder, saffron (with soaked milk), and nuts. Cook for 5 more minutes until thickened. Set aside to cool.  
2. Make Sugar Syrup:  
- Combine sugar, water, and cardamom pods in a saucepan. Boil for 5–7 minutes until one-string consistency (syrup coats the back of a spoon).  
- Turn off heat. Stir in rose water and saffron. Strain and keep warm.  
3. Fry the Bread: 
- Trim bread crusts and cut each slice into 4 triangles (or squares).  
- Heat ghee in a pan over medium heat. Fry bread until golden and crisp (1–2 minutes per side). Drain on paper towels.  
4. Assemble Shahi Tukda:  
- Quick-soak bread: Dip fried bread pieces in warm sugar syrup for 10 seconds per side. Arrange on a serving plate.  
- Layer: Pour rabri generously over the bread.  
- Garnish: Sprinkle slivered nuts and place edible silver leaf on top.  
5. Chill and Serve: 
- Refrigerate for 1–2 hours to allow flavors to meld.  
- Serve cold, drizzled with extra rabri or syrup.

- Rabri Shortcut: Use 2 cups evaporated milk + 1 cup condensed milk simmered for 15 minutes.
