1. Roast the Besan  
- Heat ghee in a heavy-bottomed pan/kadhai on medium-low flame.  
- Add besan and roast continuously for 15–20 minutes.  
  - Key technique: Stir non-stop to avoid lumps or burning. The mix should turn golden-brown, release a nutty fragrance, and become crumbly (ghee separates from the sides).
2. Cool the Mixture  
- Transfer roasted besan to a wide plate.  
- Let it cool for 15 minutes until warm (not hot). Hot mix will melt sugar, making laddus soggy.  
3. Add Sugar & Flavors  
- Mix in:  
  - Powdered sugar (sifted to avoid lumps).  
  - Cardamom powder.  
  - Nuts and raisins (if using).  
- Work quickly: Sugar dissolves slightly in warmth, binding the mix.  
4. Shape the Laddus  
- Grease palms lightly with ghee.  
- Take 2 tbsp of mixture, press firmly, and roll into smooth balls.  
  - Tip: If mix crumbles, sprinkle 1–2 tsp warm milk/ghee to bind. 
- Garnish with extra nuts.  
5. Cool & Store  
- Rest laddus on parchment paper for 10 minutes to set.
