(For a 9x13-inch pan, 24 pieces) 

Filling 
- Nuts: 3 cups finely chopped (combine walnuts, pistachios, and/or almonds)  
- Sugar: ¼ cup  
- Spices: 1 tbsp cinnamon, ½ tsp ground cloves, ¼ tsp cardamom (optional)  

Phyllo Layers 
- Phyllo dough: 1 lb (16-oz package), thawed overnight in the fridge  
- Butter: 1 cup (2 sticks), melted (or ½ cup butter + ½ cup neutral oil)  

Syrup  
- Honey: 1 cup  
- Sugar: 1 cup  
- Water: ¾ cup  
- Lemon: 1 tbsp juice + 2 strips zest  
- Flavorings: 1 cinnamon stick, 2 whole cloves, 1 tsp vanilla or rosewater (optional)

- Bake: 50 minutes until golden and crisp.  
4. Make Syrup  
- Simmer: While baklava bakes, combine syrup ingredients (except vanilla/rosewater) in a saucepan. Boil 10 minutes until slightly thickened.  
- Finish: Remove from heat. Discard zest, cinnamon stick, and cloves. Stir in vanilla or rosewater if using.  
5. Soak & Rest  
- Syrup time: Pour hot syrup over the hot baklava as soon as it leaves the oven.
