- Cinnamon stick (dalchini): 1-inch piece
- Bay leaf (tej patta): 1
Ground Spices:
- Turmeric powder (haldi): 1 tsp
- Red chili powder: 1 tsp (adjust to heat preference)
- Coriander powder (dhania): 1 tbsp
- Garam masala: 1 tsp

1. Prep the Meat & Potatoes:
- Rinse meat, pat dry. Cut potatoes into 1.5-inch cubes. Soak in water to prevent browning.

- Heat oil/ghee in a heavy pot over medium heat.
- Add whole spices (cumin, cloves, cardamom, cinnamon, bay leaf). Sizzle for 30 seconds.
- Add onions. Fry until golden brown (8–10 minutes).
3. Cook the Masala Base:
- Add ginger-garlic paste. Sauté for 2 minutes.
- Stir in tomato puree, green chilies, turmeri, red chili powder, coriander powder, and salt. Cook until oil separates (8–10 minutes).
4. Brown the Meat:
- Add meat to the masala. Fry for 5 minutes until seared.
- Pour 3 cups water. Cover and simmer on low heat for 40 minutes (or until meat is 70% tender).
5. Add Potatoes & Simmer:
- Drain potatoes and add to the pot. Cook covered for 20–25 minutes until potatoes are soft (stir gently to avoid breaking).
- If gravy is thick, add ½ cup hot water.
6. Finish with Garam Masala:
- Sprinkle garam masala and half the coriander. Simmer uncovered for 5 minutes.
7. Garnish & Serve:
- Top with fresh coriander and ginger juliennes (optional).
