🧀🥬Ingredients
For Paneer Tikka Marinade:  
- 250g paneer, cubed  
- ½ cup thick yogurt (hung curd)  
- 1 tbsp ginger-garlic paste  
- 1 tsp red chili powder  
- ½ tsp turmeric powder  
- 1 tsp garam masala  
- 1 tsp kasuri methi (dried fenugreek leaves)  
- 1 tbsp lemon juice  
- 1 tbsp oil  
- Salt to taste

- 2 tbsp oil or ghee  
- 1 large onion, finely chopped  
- 1 tbsp ginger-garlic paste  
- 2 large tomatoes, puréed  
- 1 tsp cumin seeds  
- 1 bay leaf  
- 1 tsp coriander powder  
- 1 tsp red chili powder  
- ½ tsp turmeric powder  
- 1 tsp garam masala  
- 1 cup green peas (fresh or frozen)  
- ½ cup fresh cream  
- 1 tbsp kasuri methi  
- 1 tsp sugar (optional)  
- Salt to taste  
- Fresh coriander, chopped (for garnish)

1. Marinate the Paneer:  
- In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, kasuri methi, lemon juice, oil, and salt.  
- Gently coat paneer cubes in the marination. Refrigerate for 30 minutes.  
2. Cook the Paneer Tikka:  
- Heat a skillet over medium flame. Shake off excess marinade and pan-fry paneer until golden-brown with light char marks (3–4 minutes per side). Set aside.  

3. Prepare the Gravy:  
- Heat oil/ghee in a pan. Add cumin seeds and bay leaf. Sauté until fragrant.  
- Add onions and cook until golden. Stir in ginger-garlic paste and sauté for 2 minutes.
  
- Add tomato purée, coriander powder, red chili powder, turmeric, and salt. Cook until the oil separates (8–10 minutes).  
- Optional: Cool the mixture, discard the bay leaf, and blend into a smooth paste for a silky texture.  
4. Assemble the Dish:  
- Return the gravy to the pan. Add garam masala, sugar (if using), and green peas. Simmer for 5 minutes.  
- Stir in fresh cream and kasuri methi. Gently fold in paneer tikka. Cook for 3–4 minutes on low heat.  
5. Garnish and Serve:  
- Sprinkle fresh coriander. Serve hot with butter naan, roti, or basmati rice.
