  - Salt to taste

  - 250g paneer, cubed  
  - 1/4 cup fresh cream  
  - 1 tbsp dried kasuri methi (fenugreek leaves), crushed  
  - 1/4 cup water (as needed)

1. Prep the Paneer:
- Soak paneer cubes in warm water for 10 minutes to soften. Drain and set aside.  

2. Make the Tomato-Onion Base: 
- Heat 1 tbsp butter/oil in a pan. Add onions, ginger, and garlic. Sauté until golden.  
- Add tomatoes, cashews (if using), and a pinch of salt. Cook until tomatoes turn mushy (8–10 minutes). Cool and blend into a smooth paste.  

3. Cook the Masala:  
- Heat remaining butter in the same pan. Add the blended paste, chili powder, turmeric, garam masala, and sugar. Sauté for 5 minutes on low heat.  
- Add 1/4 cup water and simmer for 8–10 minutes until the gravy thickens.  

4. Add Paneer & Finish:
- Gently stir in paneer cubes and simmer for 2–3 minutes.  
- Add fresh cream and crushed kasuri methi. Mix well. Adjust salt and spice.  
5. Serve: 
- Garnish with a drizzle of cream and a sprinkle of kasuri methi. Serve hot!
