Palak Paneer is a beloved North Indian dish where tender spinach (palak) is blended into a vibrant puree and simmered with soft paneer cubes in a fragrant spice base. This vegetarian curry is rich in iron, protein, and flavor, making it a nutritious comfort food. Often paired with naan or jeera rice, it’s a staple in Indian households and restaurants alike.

🥣✨️Ingredients:  
- Spinach: 500g (fresh, washed)  
- Paneer: 250g (cubed)  
- Oil/Ghee: 3 tbsp  
- Cumin Seeds: 1 tsp  
- Onion: 1 medium (finely chopped)  
- Garlic: 4 cloves (minced)  
- Ginger: 1-inch piece (grated)  
-Green Chili: 1 (slit; adjust to taste)  
- Tomatoes: 2 medium (pureed or finely chopped)  
- Spices:  
  - Turmeric: ½ tsp  
  - Coriander Powder: 1 tsp  
  - Garam Masala: 1 tsp  
  - Red Chili Powder: ½ tsp (optional)  
  - Salt: to taste  
- Water: ½ cup  
- Fresh Cream: 2–3 tbsp (or plain yogurt)  
- Kasuri Methi: 1 tsp (dried fenugreek leaves, optional)  
- Lemon Wedges: For garnish

1. Prep the Spinach:  
   - Blanch spinach in boiling water for 2–3 minutes until wilted. Drain and immediately plunge into ice water to retain color. Blend into a smooth puree. Set aside.  

2. Fry Paneer (Optional):  
   - Lightly pan-fry paneer cubes in 1 tbsp oil until golden. Soak in warm water to keep soft.  

3. Cook the Masala Base:  
   - Heat oil/ghee in a pan. Add cumin seeds. Once they splutter, sauté onions until golden.  
   - Add ginger, garlic, and green chili. Fry for 1–2 minutes until aromatic.  
   - Stir in tomato puree and cook until oil separates (5 minutes).  
4. Spice It Up:  
   - Add turmeric, coriander powder, red chili powder, and salt. Cook for 2 minutes.  
5. Combine Spinach Puree:  
   - Pour in the spinach puree and ½ cup water. Simmer on low heat for 8–10 minutes.  
6. Add Paneer & Finish:  
   - Gently stir in paneer cubes. Sprinkle garam masala and kasuri methi (crushed). Simmer 3–4 minutes.  
   - Swirl in fresh cream(optional). Adjust salt and spice.  
7. Serve:  
   - Garnish with a drizzle of cream and lemon wedges if you want. Serve hot with naan or basmati rice.

- Paneer: Use store-bought for convenience. Avoid overcooking to prevent rubberiness.
