For Marination:  
- 500g boneless chicken (cut into cubes)  
- ¼ cup plain yogurt  
- ½ tsp turmeric powder  
- ½ tsp red chili powder  
- ½ tsp salt

- 250g fresh spinach leaves  
- 2 cups water (for blanching)

- 2 medium tomatoes (pureed)

- ½ tsp cumin powder  
- ½ tsp garam masala  
- Salt (to taste)  
- 2–3 tbsp fresh cream (optional)

- Fresh cilantro (chopped)  
- 1 tsp kasuri methi (dried fenugreek leaves)  
- Lemon wedges

1. Marinate the Chicken:
In a bowl, combine chicken, yogurt, turmeric, red chili powder, and salt. Mix well and refrigerate for 20 minutes.  
2. Prepare Spinach Puree: 
- Bring 2 cups of water to a boil. Add spinach leaves and blanch for 2–3 minutes.  
- Drain and immediately transfer to ice water to retain color.  
- Blend into a smooth puree. Set aside.  
3. Cook the Base: 
- Heat oil/ghee in a pan. Add onions and sauté until golden.  
- Stir in ginger-garlic paste and green chilies; cook for 1–2 minutes.  
- Add tomato puree and cook until the mixture thickens (5–6 minutes).  
4. Spice It Up:
- Add coriander powder, cumin powder, and a pinch of salt. Cook until oil separates from the masala.  
5. Cook the Chicken: 
- Add marinated chicken to the pan. Sauté on medium heat until the chicken is lightly browned (5–7 minutes).  
6. Simmer with Spinach:  
- Pour in the spinach puree and mix well. Add ½ cup water if needed.  
- Cover and simmer on low heat for 15–20 minutes until the chicken is tender.  
7. Finish & Garnish:
- Garnish with ginger julien and coriander. Stir in cream for richness. (Optional)
- Adjust salt and chili to taste
