Introduction:  
Chicken Korma is a luxurious, aromatic dish rooted in Mughlai cuisine, known for its velvety texture and harmonious blend of spices. Traditionally served at royal gatherings, it combines tender chicken with a rich sauce of yogurt, cream, and nut paste, infused with cardamom, cloves, and cinnamon. - Total: 1 hour 25 minutes  
  - Marinating: 30 minutes

✨️🐔Ingredients (Serves 4-6):  
For the Marinate:  
- 1.5 lbs (700g) chicken (bone-in or boneless thighs)  
- 1/2 cup plain yogurt (full-fat)  
- 1 tsp ginger paste  
- 1 tsp garlic paste  
- 1/2 tsp turmeric  
- 1 tsp red chili powder  
- 1 tsp salt

- 3 tbsp ghee or oil  
- 1 large onion, finely sliced  
- 2-3 green cardamom pods  
- 3-4 cloves  
- 1 cinnamon stick  
- 1 bay leaf  
- 1/2 cup cashew paste (soak 1/4 cup cashews in warm water, then blend)  
- 1/2 cup heavy cream (or coconut milk for a lighter version)  
- 1 tsp coriander powder  
- 1/2 tsp cumin powder  
- 1/2 tsp garam masala  
- 1/4 tsp sugar (optional, to balance acidity)  
- 1/4 cup water (as needed)

- Fresh cilantro, chopped  
- A pinch of saffron (soaked in 1 tbsp warm milk, optional)

1. Marinate the Chicken:  
   - In a bowl, mix chicken with yogurt, ginger-garlic paste, turmeric, chili powder, and salt.  
   - Cover and refrigerate for 30 minutes.  

2. Prepare the Cashew Paste:  
   - Soak cashews in warm water for 15 minutes. Drain and blend into a smooth paste. Set aside.  

3. Cook the Aromatics:  
   - Heat ghee/oil in a heavy pot. Add cardamom, cloves, cinnamon, and bay leaf. Sizzle for 30 seconds.  
   - Add sliced onions and fry on medium-low until golden (8-10 minutes).  


4. Brown the Chicken:  
   - Add marinated chicken to the pot. Cook on medium heat for 5-7 minutes until lightly browned.  



5. Simmer the Sauce:  
   - Stir in coriander, cumin, and garam masala. Cook for 2 minutes.  
   - Add cashew paste, cream, and water. Mix well.  
   - Cover and simmer on low heat for 25-30 minutes (20 minutes for boneless), stirring occasionally.  


6. Finish and Garnish:  
   - Sprinkle sugar (if using) and adjust salt.  
   - Drizzle saffron milk and garnish with cilantro.

- Texture: For a thicker sauce, reduce water or add more cashew paste.  
- Spice Level: Adjust chili powder or add a green chili while cooking.
