Preparation Time:
- Prep Time: 15 minutes  
- Cook Time: 30 minutes  
- Total Time: 45 minutes  

Ingredients (Serves 4):  
- 200g paneer, cubed  
- 1 cup green peas (fresh or frozen)  
- 2 medium tomatoes, chopped  
- 1 large onion, finely chopped  
- 1 tbsp ginger-garlic paste  
- 1 green chili, slit (optional)  
- 2 tbsp oil or ghee  
- 1 tsp cumin seeds  
- 1/2 tsp turmeric powder  
- 1 tsp coriander powder  
- 1/2 tsp red chili powder (adjust to taste)  
- 1 tsp garam masala  
- 1 tsp kasuri methi (dried fenugreek leaves)  
- Salt to taste  
- 1/4 cup fresh coriander, chopped (for garnish)  
- 2 tbsp cream (optional, for richness)  
- 1 cup water  


Instructions: 

1. Prep Ingredients:  
   - Soak paneer cubes in warm water for 10 minutes to soften (prevents rubberiness).  
   - If using frozen peas, thaw in water.  
2. Temper Spices:  
   - Heat oil/ghee in a pan. Add cumin seeds and let them splutter.  
3. Sauté Aromatics:  
   - Add onions and sauté until golden. Stir in ginger-garlic paste and green chili; cook for 1 minute.  
4. Cook Tomato Base: 
   - Add tomatoes and cook until soft and oil separates (5-7 minutes). Optional: Blend this mixture into a smooth paste for a silkier gravy.  
5. Add Spices:  
   - Mix in turmeric, coriander powder, red chili powder, and salt. Cook for 2 minutes.  
6. Incorporate Peas & Paneer:
   - Drain paneer and pat dry. For extra texture, lightly pan-fry until golden (optional).  
   - Add peas and paneer to the masala. Gently stir to coat.  
7. Simmer:  
   - Pour in 1 cup water. Simmer on low heat for 8-10 minutes until gravy thickens.  

8. Finish with Flavors: 
   - Crush kasuri methi between palms and sprinkle into the curry. Add garam masala and cream (if using). Mix gently.  
9. Garnish & Serve:  
   - Top with fresh coriander. Serve hot with naan, roti, or basmati rice.

- Paneer Care: Avoid overcooking to keep it soft.  
- Spice Adjustments: Reduce green chili or red chili powder for milder heat.
