🥣✨️Introduction:  
Malai Kofta is a beloved North Indian delicacy that embodies richness and flavor. Originating from Mughlai cuisine, this dish features soft, melt-in-the-mouth koftas  made from paneer and potatoes, simmered in a luxuriously spiced tomato-cream gravy. Perfect for festive occasions or indulgent meals, it pairs wonderfully with naan or jeera rice.

- Total Time: 1 hour 10 minutes  


🥣✨️Ingredients  

For Koftas:  
- 2 medium potatoes (boiled & mashed)  
- 200g paneer (grated)  
- 2 tbsp cornflour or all-purpose flour (for binding)  
- 1 tsp garam masala  
- ½ tsp cardamom powder  
- Salt to taste  
- 1 tbsp raisins or chopped nuts (optional, for stuffing)  
- Oil for frying

- 2 tbsp oil or ghee  
- 2 onions (chopped)  
- 1 tbsp ginger-garlic paste  
- 3 tomatoes (chopped)  
- 10-12 cashews (soaked in warm water, optional)  
- 1 tsp turmeric powder  
- 1 tsp red chili powder  
- 1 tbsp coriander powder  
- 1 tsp cumin powder  
- 1 tsp garam masala  
- 1 cup fresh cream  
- 1 tsp kasuri methi (dried fenugreek leaves)  
- Salt to taste  
- 1 tsp sugar (optional)  
- 2 cups water  
Garnish:  
- Fresh cream, chopped cilantro

Making Koftas:  
1. Prepare Mixture:  
   - In a bowl, combine mashed potatoes, grated paneer, cornflour, garam masala, cardamom powder, and salt. Mix until smooth.  
2. Shape Koftas:  
   - Take small portions, roll into balls. Optionally, stuff with a raisin or nut. Dust lightly with flour to prevent cracking.  
3. Fry:  
   - Heat oil on medium. Fry koftas until golden (4-5 minutes). Drain on paper towels.  
Making Gravy:  
1. Sauté Aromatics:  
   - Heat oil. Add onions and sauté until golden. Add ginger-garlic paste and cook for 2 minutes.  
   - Add tomatoes, soaked cashews, and spices (turmeric, red chili, coriander, cumin). Cook until tomatoes soften (6-7 minutes).  
2. Blend & Strain:  
   - Cool the mixture, then blend into a smooth paste. Strain for a silky texture.  
3. Simmer Gravy: 
   - Reheat the paste in a pan. Add water, salt, sugar, and garam masala. Simmer 10 minutes.  
   - Stir in cream and crushed kasuri methi. Cook 2-3 minutes.  
Assemble & Serve:  
- Gently place koftas in a serving dish. Pour hot gravy over them.  
- Drizzle cream and garnish with cilantro. Serve immediately with naan or rice.
