Kadai Paneer Recipe 
A flavorful North Indian dish featuring paneer (cottage cheese) in a spicy, aromatic tomato-capsicum gravy, cooked in a traditional Indian wok (kadai). Perfect with naan or rice!

Preparation Time  
- Prep Time: 20 minutes  
- Cook Time: 30 minutes  
- Total Time: 50 minutes  
- Serves: 4  


Ingredients 
- Main Components:  
  - 250g paneer, cubed (softened in warm water if store-bought)  
  - 1 medium capsicum (bell pepper), cubed  
  - 3 tbsp cooking oil or ghee  
  - 1 tsp cumin seeds  

- Aromatics & Vegetables:  
  - 2 medium onions, finely chopped  
  - 1 tbsp ginger-garlic paste  
  - 1 green chili, slit (optional, for heat)  
  - 3 medium tomatoes, finely chopped  

- Spices:  
  - 1 tsp turmeric powder  
  - 1 tsp red chili powder (adjust to taste)  
  - 1.5 tsp garam masala  
  - 1 tbsp kasuri methi (dried fenugreek leaves), crushed  
  - Salt to taste  
  - Kadai Masala (homemade):  
    - 1.5 tbsp coriander seeds (dry-roasted & coarsely ground)  
    - 2-3 dried red chilies (dry-roasted & crushed)  
  - OR 2 tbsp store-bought kadai masala powder  

- Garnish:  
  - 2 tbsp fresh cream (optional)  
  - Fresh coriander leaves, chopped  


Instructions  
1. Prepare Kadai Masala (if homemade):  
   - Dry roast coriander seeds and dried red chilies in a pan until fragrant. Coarsely grind and set aside.  

2. Sauté Base:  
   - Heat oil in a kadai or heavy-bottomed pan. Add cumin seeds. Once they splutter, add onions and sauté until golden.  
   - Stir in ginger-garlic paste and green chili. Cook for 2 minutes.  
3. Cook Tomatoes & Spices:  
   - Add chopped tomatoes. Cook until mushy and oil separates (8-10 minutes).  
   - Add turmeric, red chili powder, and kadai masala (homemade or store-bought). Sauté for 2 minutes.  
4. Add Capsicum & Paneer :  
   - Toss in capsicum,red bell pepper  and cook for 3-4 minutes until slightly tender.  
   - Gently stir in paneer cubes. Add ½ cup water for gravy consistency (if needed). Simmer for 5 minutes.  
5. Finish & Garnish:  
   - Sprinkle garam masala, kasuri methi, and salt. Mix well.  
   - Turn off heat. Drizzle cream (optional) and garnish with coriander.  


Tips 
- Paneer Texture: Lightly fry paneer in oil for a golden crust before adding (optional).  
- Vegan Option: Substitute paneer with tofu and omit cream.  
- Spice Adjustments: Reduce red chilies for milder flavor; add a pinch of sugar to balance acidity.  


Serving Suggestions 
- Pair with butter naan, roti, or jeera rice.  
- Serve hot, garnished with a lemon wedge for tanginess.
