✨️Ingredients 

For Chicken Marinate  
- Chicken: 500g boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)  
-  ½ cup plain yogurt (Greek or hung curd for thickness)  
- Ginger-Garlic Paste: 1 tbsp  
- Lemon Juice: 1 tbsp  
- Spices:  
  - 1 tsp Kashmiri red chili powder (for color, less heat)  
  - 1 tsp turmeric  
  - 1 tsp coriander powder  
  - 1 tsp cumin powder  
  - 1 tsp garam masala  
- Salt: 1 tsp

- Oil/Butter: 2 tbsp oil + 1 tbsp butter  
- Onion: 1 large, finely chopped  
- Ginger-Garlic Paste: 1 tbsp  
- Tomatoes: 1½ cups tomato puree (or 4–5 blended fresh tomatoes)  
- Spices:  
  - 1 tsp cumin seeds  
  - 1 tsp coriander powder  
  - 1 tsp paprika or Kashmiri chili powder  
  - ½ tsp turmeric  
  - 1 tsp garam masala  
  - ½ tsp fenugreek leaves (kasuri methi), crushed (optional but recommended)  
- Cream: ½ cup heavy cream (or coconut milk for dairy-free)  
- Sugar: 1 tsp (balances acidity)  
- Salt: To taste  
- Water: ½ cup (adjust for consistency)  
- Cilantro: For garnish

1. Marinate the Chicken  
- In a bowl, mix yogurt, ginger-garlic paste, lemon juice, chili powder, turmeric, coriander, cumin, garam masala, and salt.  
- Add chicken pieces and coat evenly. Cover and refrigerate for 2–4 hours (overnight for deeper flavor).  
2. Cook the Chicken 
- Grill/Bake: Skewer marinated chicken and grill on high heat (or bake at 200°C/400°F) for 10–12 minutes until charred at edges.  
- Pan-Fry Option: Sear in a hot skillet with 1 tbsp oil until golden. Set aside.  
3. Prepare the Masala Sauce  
- Sauté Base: Heat oil and butter in a pan. Add cumin seeds, then onions. Fry until golden. Add ginger-garlic paste and cook for 1–2 minutes.  
- Spices: Stir in coriander, chili powder, turmeric, and garam masala. Cook for 30 seconds to bloom spices.  
- Tomato Base: Add tomato puree, sugar, and salt. Cook on medium heat for 8–10 minutes until oil separates.  
- Cream & Finish: Reduce heat. Stir in cream, fenugreek leaves, and ½ cup water. Simmer 5 minutes.  
- Add Chicken: Fold in grilled chicken. Simmer 5–8 minutes to meld flavors.  
4. Serve
- Garnish with cilantro and a drizzle of cream. Serve with steamed basmati rice, garlic naan, or roti.
