It features tender chicken pieces cooked in a spicy tomato-based gravy with caramelized onions, crunchy bell peppers, and whole spices like coriander seeds and dried red chilies. - 1/2 cup fresh coriander leaves, chopped
- 1/4 cup water (as needed)

1. Marinate the Chicken
- In a bowl, mix chicken with ginger-garlic paste, red chili powder, turmeric, lemon juice, and salt.
- Let it marinate for 15–20 minutes.
2. Prepare the Kadai Masala
- Dry roast coriander seeds, dried red chilies, cumin seeds, and peppercorns in a pan on low heat for 2–3 minutes until fragrant.
- Let it cool, then coarsely grind in a mortar-pestle or spice grinder. Set aside.
3. Cook the Chicken
- Heat 1 tbsp oil in a kadai or deep pan. Add the marinated chicken and sauté on medium heat for 5–6 minutes until lightly browned. Remove and set aside.
4. Make the Gravy
- In the same kadai, heat remaining oil. Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and cook for 1–2 minutes.
- Add chopped tomatoes and cook until soft and oil separates (~5–7 minutes).
- Stir in the prepared kadai masala, garam masala, and salt. Mix well.
5. Combine Everything
- Add the sautéed chicken, bell peppers, and kasuri methi. Mix to coat the chicken in the masala.
- Add 1/4 cup water (if needed) and simmer covered for 10–12 minutes on low heat until the chicken is tender and gravy thickens.
