Indo-British Spicy Stir-Fry with Bell Peppers

✨️🐔Introduction:  
Chicken Jalfrezi is a vibrant, medium-spicy dish rooted in Anglo-Indian cuisine, popularized in the UK. It features tender chicken, crisp bell peppers, and onions in a tangy tomato sauce, infused with aromatic spices. The dish is semi-dry, with a bold flavor profile from ginger, garlic, and fenugreek, making it perfect with naan or steamed rice.

- Prep: 15 minutes (plus 15 minutes marinating)  
- Cooking: 30 minutes  
-  Total:1 hour  


✨️🐔Ingredients (Serves 4):
For the Marinate:
- 500g boneless chicken (breast or thighs), cubed  
- 3 tbsp plain yogurt  
- 1 tbsp ginger-garlic paste  
- 1 tsp turmeric powder  
- 1 tsp red chili powder  
- ½ tsp salt

- 3 tbsp vegetable oil  
- 1 tsp cumin seeds  
- 1 large onion, thinly sliced  
- 2 green chilies, slit lengthwise  
- 1 tbsp ginger-garlic paste  
- 1 red bell pepper, sliced  
- 1 green bell pepper, sliced  
- 2 tomatoes, finely chopped  
- 2 tbsp tomato puree  
- 1 tsp coriander powder  
- 1 tsp garam masala  
- 1 tsp kasuri methi (dried fenugreek leaves), crushed  
- Salt to taste  
- Fresh coriander, chopped (for garnish)

1. Marinate the Chicken:  
   In a bowl, mix chicken with yogurt, 1 tbsp ginger-garlic paste, turmeric, red chili powder, and salt. Let it marinate for 15 minutes.  
2. Temper the Spices:
   Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for 10 seconds. Add sliced onions and sauté until golden (5-6 minutes).  
3. Aromatics:
   Stir in green chilies and 1 tbsp ginger-garlic paste. Cook for 1-2 minutes until fragrant.  
4. Cook the Chicken: 
   Add the marinated chicken. Sear until lightly browned and cooked through (8-10 minutes).  
5. Spices and Tomatoes: 
   Sprinkle coriander powder and garam masala over the chicken. Add chopped tomatoes and tomato puree. Cook until the tomatoes soften and the oil separates (5-7 minutes).  
6. Add Bell Peppers: 
   Toss in sliced bell peppers. Stir-fry for 3-4 minutes until tender yet crisp.  
7. Finish with Fenugreek:  
   Crush kasuri methi into the pan. Adjust salt and cook for 1 minute.  
8. Garnish and Serve:
   Sprinkle fresh coriander. Serve hot with naan, roti, or jeera rice.  


Tips: 
- For extra heat, add ½ tsp Kashmiri red chili powder.  
- Substitute chicken with paneer or tofu for a vegetarian version.  
- Avoid overcooking peppers to retain their crunch.  

Serving Suggestion:  
Pair with cooling raita or a cucumber salad to balance the spice.
