500g boneless chicken (thigh or breast pieces)

2 tbsp lemon juice

1 tbsp cream or mayonnaise (optional for extra richness)

1 tsp garam masala

1/2 tsp cumin powder

1 tbsp oil or mustard oil

Salt to taste

1. In a blender, grind the coriander, mint, green chilies, and lemon juice into a fine paste.

2. In a bowl, mix the green paste with yogurt, ginger-garlic paste, cumin powder, garam masala, cream, and salt.



Step 2: Marinate the Chicken

1. Coat the chicken pieces well with the marinate.

2. Cover and refrigerate for at least 2 hours, ideally overnight.



Step 3: Cook the Chicken

Option 1 (Grill or Tandoor):
Preheat oven to 200°C (392°F). Grill chicken on skewers or a wire rack for 20–25 minutes, turning halfway until slightly charred.
Option 2 (Pan-fry):
Heat 1 tbsp oil in a nonstick pan. Cook marinated chicken on medium-high heat until golden brown and cooked through (about 5–6 minutes per side).
Option 3 (Gravy Version):
After searing the chicken, add 1/2 cup fresh cream or 1/2 cup milk with a little extra marinade, simmer for 10 minutes until a light green curry forms.
