Introduction:  
Achari Paneer is a vibrant North Indian dish where soft paneer (cottage cheese) is cooked in a tangy, spicy gravy infused with traditional pickling spices (achar). This curry balances the pungency of mustard, fenugreek, and fennel with the creaminess of yogurt and paneer, creating a bold flavor profile. Perfect with naan or steamed rice, it’s a crowd-pleaser for spice lovers!

- Prep Time: 15 minutes  
- Cook Time: 30 minutes  
- Total Time: 45 minutes  

Ingredients (Serves 4):  
- 250g paneer, cubed  
- 3 tbsp oil (mustard oil for authenticity, or any neutral oil)  
- 1 tsp mustard seeds  
- 1 tsp fenugreek seeds (methi)  
- 1 tsp fennel seeds (saunf)  
- 1 tsp cumin seeds  
- 1 tsp nigella seeds (kalonji)  
- 1 large onion, finely chopped  
- 1 tbsp ginger-garlic paste  
- 2 tomatoes, pureed  
- 1/2 cup yogurt (whisked)  
- 1 tsp turmeric powder  
- 1 tsp red chili powder  
- 1 tsp coriander powder  
- 1/2 tsp garam masala  
- Salt to taste  
- 1 bell pepper (optional), sliced  
- Fresh coriander, chopped (for garnish)  

Instructions: 

1. Prep the Paneer:  
   - Soak paneer cubes in warm water for 10 minutes to soften (prevents crumbling). Drain and set aside.  
2. Temper the Spices 
   - Heat oil in a pan. Add mustard, fenugreek, fennel, cumin, and nigella seeds. Sauté for 30 seconds until fragrant.  
3. Cook the Base:  
   - Add chopped onions and sauté until golden. Stir in ginger-garlic paste and cook for 2 minutes.  
   - Add tomato puree and cook until the oil separates (5-7 minutes).  
4. Add Spices & Yogurt: 
   - Mix in turmeric, red chili powder, coriander powder, and salt. Cook for 2 minutes.  
   - Reduce heat, add whisked yogurt, and stir continuously to avoid curdling.  
5. Incorporate Paneer & Simmer:  
   - Gently add paneer cubes (and bell pepper if using). Coat with the gravy.  
   - Sprinkle garam masala, cover, and simmer on low heat for 5-7 minutes.  
6. Garnish & Serve:  
   - Top with fresh coriander. Serve hot with naan, roti, or jeera rice.  
Tips:  
- For extra tanginess, add 1 tsp mango powder (amchur) or 2 tbsp chopped raw mango.  
- Replace paneer with tofu for a vegan version.  
- Lightly fry paneer before adding to the gravy for a firmer texture.  

Serving Suggestion:
